Induction Stove and Magnetic pots and pans
I tried a new product to cook on the ambulance: Induction stove top cooking. The one I selected was made by True Induction. It's a double burner and can be inset. At the time I bought it I thought I was going to build all new kitchen counters but the ones already installed in the ambulance were really nice and I decided not to tear them out. So my stove ended up being a counter top stove.
This is where I place it when I am cooking. If I need counter space I can move it out of the way.
When I originally started to design and build/order things I knew I didn't want to use propane. Sandy Dreams is propane and I didn't want to mess with the hassles I've had to deal with on the boat. (The extra hose plumbing, tanks, space, etc.) So that left me with two options electric or induction. I also have a single burner electric stove on Sandy and even though it works I've never been impressed with it.
So never owning an induction stove before I didn't know what to expect. I absolutely love it. It transfers the energy right to the pot and is 90% efficient. It will boil water in two minutes. It's really easy to clean and because it doesn't get hot the spilled food doesn't get baked on to the top. I have cooked every meal in the ambulance except two since May 2nd and I make coffee in the morning with a peculator. I have zero complaints.
Pros and cons
Pros:
1. Very energy efficient and cooks fast.
2. Easy to clean.
Cons:
1. Expensive
2. The top is some kind of glass/ceramic and I feel like it could get broken.
3. If you have a favorite pot it might not be compatible.
This is a pro and con! The stove doesn't produce heat so it doesn't heat up the ambulance. Which living in Alaska is a con, but that could be good if you were living in Phoenix. It is definitely not an emergency source of heat.
Pots and pans
The stove transfers the energy to the pots through some type of magnetic/magic so you have to have magic/magnetic pots. I bought a set of five stackable from Magma. They have a removable handle which allows them to stack together. There are two lids. One lid fits two pots while the other lid fits the other three pots. They are stainless and really heavy. I chose this particular set to save space.

Pros:
1. Save space
2. Heavy duty - well built
Cons:
1. Expensive
2. I had a hard time finding them, everyone advertises them but no one had them.
